Roasted Beet Salad

Tonight we conquered a unique vegetable (actually a “tuber”)–the Sunchoke! Ed and I had tried sunchokes once at a local restaurant–we had never heard of them and the server piqued our interest–but, we did not care for them. They were very hard and not super flavorful.
