I love tzatziki sauce! GOOD tzatziki sauce, that is. I had some very disappointing tzatziki when out for lunch the other day (it was way too sweet–were they using vanilla flavored yogurt???) and had to go home and make it myself to restore my positive memories. My friend Ryan made this salad years ago and I fell in love with the perfect blend of ingredients: healthy spinach, creamy Gorgonzola, and a tangy, just sweet enough, strawberry dressing, topped with a crunch of croutons. This was my favorite appetizer at a recent cocktail benefit (thank you, Chicago House!).
