Roasted Carrots and Apples

Turkey Carcass = Delicious

Classic Cranberry Sauce

I have always loved my mom’s cranberry sauce and she has always insisted that it is so easy to make.  Now that I have finally secured the recipe from her–I realize that my mom was right.  Isn’t that always the case?  I will share the secret with you, and once you try it, trust me that you will never ever go back to that quivering, can-shaped, cranberry flavored food purporting to be cranberry sauce.

Total time: 25 minutes (really)
Serves: 6

1 cup water
1 cup sugar
12 oz fresh cranberries

Thanksgiving Sides:
Fresh Country Style Stuffing

Proper stuffing doesn’t have to be so boring and … stuffy.  Add a little character with mushrooms, sausage, and pecans. C’mon, all the cool bread cubes are doing it …

Time from start to dinner: 1 hour 30 minutes (45 minutes active time)
Serves: 8-12

3 Tbsp olive oil
3 cups chopped celery
2 cups chopped onions
1 cup sliced brown mushrooms
1 pound bulk pork sausage
1 cup chopped pecans
6 cups stale bread cubes (cube bread and expose it to air overnight)
1 tsp salt
1 tsp dried thyme
1 tsp dried sage
2 cups chicken broth
