DIY Salad Dressing

I am a recent convert to making all of my own salad dressing; once the people of Barcelona showed me how low maintenance it could be. Roasted Beet Salad
with Sauteed Sunchokes on the side

Tonight we conquered a unique vegetable (actually a “tuber”)–the Sunchoke! Ed and I had tried sunchokes once at a local restaurant–we had never heard of them and the server piqued our interest–but, we did not care for them. They were very hard and not super flavorful. So, why try them again? Well, they came in our weekly vegetable box and I don’t like to waste things, so I decided to try cooking them myself.

Broccoli Fettuccine Alfredo
& Honey Romaine Salad

I’d like to introduce you to my fresh Alfredo. Alfredo has a superiority complex. He thinks he’s extremely simple and far tastier than his jar-ridden friends. (Don’t tell him, but I think he’s right.) And, caution: This salad is so fast & so delicious that it may become addictive. If you begin eating it for breakfast, you may want to seek counseling. I had a similar salad at a local restaurant and loved it so much that I had to make my own version at home.
