Time to take a break from your everyday tomato and lettuce salad–especially now that fresh local tomatoes are going out of season . This one is unique and just as simple. It’s also a great option to use the radishes that I often receive through our CSA and don’t know how to use. I am still on the hunt for more tasty radish dishes. If you have ideas, please send them my way!

Spring has arrived! At least sporadically here in Chicago. But despite the occasional 40 degree day, the farmers’ market is open and local asparagus is plentiful. Even my avowed vegetable-hating father-in-law agreed that the results are delicious.
The first step in this recipe is to make a pot of nutritious homemade chicken stock. Wait, wait, wait, before you stop reading: if you’re new to stock, it’s really not difficult or time consuming. Plus, it tastes [Continue reading ...]
Incorporate some vegetables into your breakfast and make pancakes a bit more nutritious by adding sweet potato. My family loves these pancakes and now prefers them to “regular” pancakes. In fact, my one year old has been known to eat seven in one sitting. She’s growing. My aunt Maria, not a usual fan of vegetables, also gave them rave reviews on a recent vacation, and encouraged me to post the recipe ASAP.
Sweet potato pancakes have a great flavor and are heartier than a typical white fluffy pancake. Sweet potatoes [Continue reading ...]
